2 lbs. Boneless Beef Short Ribs
1 Medium Sweet Yellow Onion
14 oz. Seedless Diced Tomatoes
1 C. Red Wine
2 C. Beef Stock
2 oz. Billy Goat Kicker Seasoning
2 oz. Crumbled Bleu cheese
Loaf Ciabatta Bread
Rub Short Ribs with Kicker Seasoning. Transfer to oven proof dish. Thinly slice the onion and place on top of the short ribs. Add tomatoes, wine and stock then cover tightly and place in 400 degree oven for 2 hours. Carefully remove the cover and mix the ingredients. Cover and return to oven for 45 – 60 min., depending on tenderness. When fully tender, cool slightly and shred meat, reserving any liquid. Slice bread, brush with olive oil and grill lightly.
Place shredded beef onto grilled Ciabatta bottom and drizzle with some of the remaining liquid . Add bleu cheese crumbles and grilled Ciabatta top. Cut into quarters. Serve with horseradish cream sauce, a crunchy pickle and of course…Billy Goat Chips.
